Ingredients
300g basmati rice
25g butter
1 large onion, finely sliced
1 bay leaf
3 cardamom pods
small cinnamon stick
1 tsp turmeric
4 skinless chicken breasts, cut into large chunks
4 tbsp balti curry paste
85g raisins
850ml chicken stock
30g coriander, ½ chopped, ½ leaves picked and 2 tbsp toasted flaked almonds, to serve
Preparation
This is a recipe for Biryani, a flavorful and aromatic dish made with rice, chicken, and spices. To make this dish, first soak the basmati rice in water, then wash it until the water runs clear. Next, heat the butter in a saucepan and cook the onion, bay leaf, cardamom pods, and cinnamon stick for 10 minutes. Add the turmeric, chicken chunks, and curry paste, cooking until aromatic. Stir the rice, raisins, and chicken stock into the pan, then place a tight-fitting lid on it and cook over low heat for 5 minutes. Turn off the heat and let it sit for 10 minutes before stirring in the chopped coriander. To serve, scatter the remaining coriander leaves and toasted almonds on top.
