Preparation


Method for dough:

Mix altogether and knead into a hard dough. Leave to rest for 1 hour. Make into balls. Roll into saucer size roti. Cut in half from center. Apply water on side put filling and fold as demonstrated.


Boil, peel, and mash 3 potatoes coarsely. Heat 2 tablespoons of oil and fry 2 tablespoons of onion until it turns transparent. Add ginger, turmeric, crushed red pepper, cumin seeds, coriander seeds, salt, chaat masala, fennel seeds, lemon juice, green chilies, and mashed potatoes. Mix everything together and let it cool. Roll out the dough, cut it in half, and make a cone shape using water to seal the edges. Fill the cone with the potato mixture and seal the edges. Finally, pinch the sides and fry the samosa in warm oil on low heat.
